Same-Day Sourdough Dinner Rolls

Fluffy, flavorful, and simple, these same-day sourdough dinner rolls will leave you feeling warm and cozy with any meal. And the best thing about them is that you can start and finish them in the same day!

Just before Thanksgiving, my mom texted me a photo of a recipe with a message that read “can you make these for Thanksgiving”? The photo was a recipe for my great-grandmother’s dinner rolls, and it had been formatted and typed up by a great-aunt.

Which, if you’re the bread-maker in your family, you know the answer is almost always yes! I love making bread for my family!

Upon looking at the recipe, I started to laugh, because it wasn’t formatted like any recipe I’d ever seen. The ingredients and instructions were all lumped together, and it was as if someone watched her make them and simply wrote out what they saw. It wasn’t impossible to follow, especially for an experienced bread-maker, but it was fun to say the least.

I did end up making the original recipe for my family Thanksgiving dinner, and they were a hit! I then decided that I wanted to convert them to a sourdough recipe. With a few trial runs, I’ve landed on a great recipe for delicious dinner rolls.

How to Make Same-Day Sourdough Dinner Rolls

With active sourdough starter, begin to mix the ingredients together. I like to start in my mixer and move to the countertop just to make things easier, but you could definitely do it all in a large mixing bowl.

After you’ve mixed the ingredients, grease a large bowl and place your dough in the bowl to ferment for 8-12 hours.

About an hour and a half before you plan to serve the rolls, shape the rolls and place them into a greased pan before covering for a second rise.

Brush the rolls with egg wash, bake them, and coat with additional butter to finish.

Active Sourdough starter is added to flour, milk, and other simple ingredients are combined to make a soft dough- resulting in flavorful, fluffy dinner rolls.

  • 1 Large Mixing Bowl
  • 1 9×13 Baking Dish

Ingredients
  

  • ½ Cup Sourdough Starter Active and Bubbly
  • Cups Milk Warmed
  • 3 Tbsp Honey
  • 1 tsp Salt
  • Cup Butter Plus Extra for Topping
  • 3⅔ Cups All Purpose Flour
  • 1 Egg for egg wash

Preparation

  • The Night before you plan to have the rolls, feed your starter to ensure it is active by the morning.
  • In the morning, heat the milk and melt the butter. Combine your active starter, warm milk, honey, salt, melted butter, and 3 Cups of flour together. I like to use my mixer, but you can also do it by hand in a mixing bowl.
    This should make a very loose dough.
  • On a clean surface, evenly sprinkle 2/3 Cup of flour and dump your loose dough in the middle. Using your hands, slowly incorporate the additional flour until it is no longer sticky, but still soft and light. We don't want this to be too dense.
  • Grease a large bowl, and place your dough inside. Cover and let rest 8-12 hours to ferment.

Shaping and Baking

  • About two hours before you intend to serve them, dump the dough onto a lightly floured surface. Divide the dough into 15 even sections and shape into balls. I like to turn them on the countertop a few times to create a little tension.
  • Place each dough ball into a grease 9×13 pan, cover with a damp tea towel or plastic wrap, and allow to rise for 1 more hour.
  • Preheat your oven to 350℉, and brush the tops of the rolls with an egg wash.
  • Bake for 25-30 minutes, or until golden brown on top. Once baked, to with additional butter if desired.

Notes

  1. Do your best to avoid the temptation to add extra flour to your dough. A soft, light dough, will allow your rolls to maintain the airy texture we all love.
  2. This recipe calls for honey, but you could use any kind of sugar or sweetener you’d like.
  3. If your oven has a tendency to burn the bottoms of things, consider placing a sheet pan on a lower rack to avoid that with these rolls.
  4. I generally place my rolls in five rows of 3 for an even rise. They always fit just fine.
